Ingredients
Batter
2 large eggs
1 cup sugar
1/3 cup vegetable oil
2-3 mashed ripe bananas
2 tsp. vanilla
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
½ tsp. nutmeg
2 2/3 cups flour
1 cup buttermilk
1 cup chopped walnuts
1 cup raisins (optional)
Topping
1 cup raw sugar
2 tsp. vanilla
2 tsp. cinnamon

Directions
- Preheat oven to 350 degrees.
- Beat eggs with sugar and oil. Add bananas and vanilla.
- Sift dry ingredients together and add alternately with buttermilk.
- Add walnuts and raisins. Do not over mix.
- Pour batter into muffin tins sprayed with non-stick pan spray. - Place a teaspoon of the topping on top of each muffin’s batter. It will sink to the bottom of the muffin and glaze the bottom-when you turn them over they will be glazed.
